Parmesan Talapia

My MIL shared this easy recipe with me. For someone who never cooked fish till I was married and even then it's a rare thing, usually shrimp dishes, it's easy and so tasty!Ingredients:
Tilapia
Parmesan Cheese
Butter
Fresh ground pepper

Smother tilapia in butter and place in a dish. Then lightly sprinkle with pepper and (not so lightly) with Parmesean cheese. Drizzle a little more butter on top. Cook in oven, WITH LID, at 400 for 35 mins or so.

Garlic Angel Hair Side

This is something I threw together to add to our meal. Real easy but I loved the flavor.

Ingredients:
1/2 box angel hair pasta
2 T butter
minced garlic
1/4 C parmesean cheese
2 T chopped green onions
Season with Garlic spread, salt and pepper to taste

Cook noodles with minced garlic till done. Strain and put back in to the pot with remaining ingredients. Mix and serve.

Romaine mandarin orange Salad

WOW! This salad blew me away! SO GOOD!!! I skipped the whole dressing part and used a poppy seed dressing I already had in the fridge, mixed a little red wine vinegar and sugar to taste and it turned out PERFECT!! I just loved the combination of sauted nuts, bacon, oranges and lettuce!
Ingredients
  • 6 slices bacon
  • 1/3 cup apple cider vinegar
  • 3/4 cup white sugar
  • 1/2 red onion, coarsely chopped
  • 1/2 teaspoon dry mustard powder
  • 1/4 teaspoon salt
  • 1/2 cup vegetable oil
  • 1 teaspoon poppy seeds
  • 10 cups torn romaine lettuce leaves
  • 1 (10 ounce) can mandarin orange segments, drained
  • 1/4 cup toasted slivered almonds

Directions

  1. Place bacon in a large, deep skillet. Cook over medium high heat until evenly brown. Drain, crumble and set aside.
  2. Place vinegar, sugar, red onion, mustard powder, and salt into the bowl of a blender. Cover, and puree on high until smooth. Reduce blender speed to medium-low; slowly pour in the vegetable oil and blend until incorporated and the dressing is creamy. Stir in the poppy seeds and set aside.
  3. To serve, toss the romaine in a large bowl with the crumbled bacon, Mandarin oranges, and enough dressing to moisten. Place onto salad plates and sprinkle with toasted almonds.

Marlboro Man Sandwich

Full of flavor and SO GOOD! Your man will LOVE this! I homemade some sub bread and it was even that much better....AMAZING with the homemade bread! This is from The Pioneer Womans website

Ingredients

  • 1 whole Large (or 2 Small) Onions
  • 2 sticks Butter (lots And Lots Of Butter)
  • 2 pounds (to 3 Pounds) Cube Steak (tenderized Round Steak That's Been Extra Tenderized)
  • Lawry's Seasoned Salt (or Similar Seasoned Salt)
  • 1/2 cup (approximately) Worcestershire Sauce
  • Tabasco Sauce, To Taste
  • 4 whole French/deli Rolls (earthgrains Are Best!)

Preparation Instructions

Slice onions and cook in 1/4 stick butter until soft and light brown. Remove and set aside.

Slice cube steak against the grain. Season with Lawry’s.

Heat 2 tablespoons butter over high heat (in same skillet) until melted and beginning to brown. Add meat in single layer. Cook one side until brown, then flip and cook until brown, about a minute on both sides.

Add 1/2 cup (at least) Worcestershire sauce, 5 to 6 shakes Tabasco, and 2 tablespoons butter. Add cooked onions. Stir to combine.

Butter halved French rolls and brown in skillet.

To assemble, lay bottom half of French roll on plate. Place meat mixture, followed by a spoonful of juice from the pan. Top with other half of roll, cut in half, and devour!


Crock Stoganoff

I need to make this again! It's a Favorite of my hubs and the meat is not what I normally buy.
1 1/2 lbs round steak, cut in strips
2T flour
Salt and pepper to taste
1 onion sliced
1 1/2 C mushrooms, sliced
1 can beef broth
1/2 t Worcestershire sauce
1 C low-fat sour cream
3 Cups egg noodles cooked

Dredge the strips of beef in flour and place on the bottom of the Crock-Pot. Salt and pepper to taste. Add the onion, mushrooms, beef broth, and Worcestershire sauce. Cover and cook on low for 8-10 hours (or on high for 4-5 hours)
Just before serving, stir the sour cream into the stroganoff. Serve on bed of noodles

Left over roast Enchiladas

As always I had left over Pork Roast from our Sunday Roast Dinner. I always LOVE making things with the that slow cooked meat. So Here's what I did last night and the Fam really liked it!!
All you need is:
Left over Roast
Tortillas
green enchilada sauce
Cheese (I had cheddar but Monterrey Jack would be delish too)

Fill tortillas with meat, cheese and little bit of Green Sauce. Roll and place in pan. Pour Green sauce over tortillas and sprinkle with plenty of cheese. Cover with foil and Bake on 375 for 35 mins

Southwestern Egg Rolls

Here's a fun, delicious twist to the normal Asian Egg Rolls. Quite honestly I substituted a few things that were hard to find but got it as close as I could. So good!!

1 lb bulk hot Italian Sausage
1 Can (15 oz) black beans, rinsed and drained
1 Can (11oz) Mexicorn, drained
1Can (10 oz) Diced tomatoes and green chilies undrained
1 pkg (8.8 oz) ready-to-serve spanish rice
19 Eff Roll Wraps
Oil for frying

In a large skillet, cook sausage over medium heat until no longer pink; drain. Stir in the beans, mexicorn,tomatoes and rice. Bring to a boil. Reduce heat; simmer, uncover, for 5-10 mins or until heated through.
Place 1/3 C sausage mixture in the center of each egg roll wrap and roll as pkg directed. Fry in the oil and eat!

Crunchy Romaine Strawberry Salad

I usually don't spend this much time on salad (since my fam doesn't eat too much) but this is SO Delicious and well worth the time!!!!! It's simple to make just takes about 1/2 an hour
1 pkg ramen noodles
1 C chopped walnuts
1/4 C butter
1/4 C vegetable oil
1/4 C Sugar
2 T red wine vinegar
1/2 t soy sauce
8 C torn Romaine Lettuce
1/2 C chopped green onion
2 C fresh strawberries sliced

Discard seasoning pkg from ramen noodles. Break noodles into small pieces. In a skillet saute noodles and walnuts in the butter for 8-10mins or until golden brown. Let Cool.
For Dressing, in a jar with a tight fitting lid, combine the oil, sugar, vinegar and soy sauce; Shake well.
Just before Serving , combine romaine, onions, strawberries and noodle mixture in a large bowl. Drizzle with dressing and toss gently. Yields 12 servings



Minestrone Soup

Literally THE BEST Minestrone Soup EVERRRRR!!! I Love it! Hubs LOVES IT!!! And the boys like it too!!!! YUMMM! Maybe I'll make some of this tonight. I half the recipe for my size family of 4 and still have leftovers for later


Ingredients:
2- 12 oz Pkg Jummy Dean Sausage (I usually only use 1/2 that)
4 C water
2 C each Chopped onion, Celery and carrots (zucchini squash is really good too)
1 can beef broth
1 Large can tomatoes
2-8 oz Cans Tomatoe Sauce
1 t oregano
1/2 t Basil
1 T Parsley
2 cloves garlic

Brown Sausage. Drain. Add all ingredients and simmer for 6 hours in crock pot or dutch oven.

30mins before serving add:
1 cup macaroni noodles
can of Green beans.
Opt sprinkle parm cheese

Serves 8-10

Adobo Chicken

What a great meal.

Ingredients:
2lbs Chicken thighs (I used chicken breast since I had it on hand)
1 C soy sauce
1/2 C white vinegar
Pepper
2 T brown sugar
5 garlic cloves crushed
3 bay leaves

Combine all ingredients in a large oven safe pot (besides chicken) Place chicken skin side down in pot, bring to a boil. Reduce heat and cover and simmer for 30 mins. Take lid off, flip thighs, let simmer for additional 30min. Serve over Rice

German Pancakes

German Pancakes (Brent’s favorite thing to make…and eat)

6-8 egg

1C Milk

1C Flour

¼ C Sugar

1tsp vanilla

½ tsp salt

1/3 C Margarine or butter

Melt butter in pan in the oven and blend all remaining ingredients in blender. Pour into pan and cook for _____mins on ______

Chicken Alfredo Casserole


I'm a big Chicken alfredo fan and I love the broccoli in this. I've cooked this this chicken up for other recipes too, has a great flavor! Try it! Love it!

Ingredients:
1lb spiral pasta (cooked according to package directions and drained)
3 boneless skinless chicken breast halves
¼ teaspoon dried rosemary
¼ teaspoon thyme
¼ teaspoon poultry seasoning
¼ teaspoon garlic powder
¼ teaspoon salt
3 cups shredded mozzarella cheese
8 ounces fresh sliced mushrooms (pre-cooked)
1 head of broccoli (cut into florets)
Alfredo Sauce-
½ cup sweet butter
2 garlic cloves (minced)
2 cups heavy cream
¼ teaspoon white pepper
½ cup grated parmesan cheese
¾ cup mozzarella cheese

Cooking Instructions:
Step 1: In a small bowl combine rosemary, thyme, poultry seasoning, garlic power and salt. Pound chicken breast halves to an even thickness. Season with the seasoning mixture on both sides of the chicken breasts. Place chicken onto a greased outdoor grill or indoor grill man. Grill until chicken is fully cooked. Allow chicken to cool and then slice into strips. Set aside.
Step 2: To make alfredo sauce: (the noodles can be cooked at this point) Melt butter in a medium saucepan over medium-low heat. Add the garlic, cream, white pepper and bring the mixture to a simmer. Stir often. Add parmesan cheese and simmer the sauce for 8-10 minutes or until the sauce has thickened and become smooth. Add the mozzarella cheese and cook until smooth.
Step 3: In a large bowl combine chicken, cooked pasta, broccoli, mushrooms, 1 cup of mozzarella cheese. Stir in alfredo sauce. Pour the mixture into a large casserole dish. Top with remaining mozzarella cheese. Bake in the oven at 350 degrees for 25-30 minutes.
(Makes 8 Servings)

Sesame Salad Recipe

Another delicious recipe from blogchef!

Ingredients:
1 (16 ounce) package bow tie pasta
¼ cup sesame seeds
½ cup vegetable oil
1/3 cup rice vinegar
1/3 cup soy sauce
1 teaspoon sesame oil
3 tablespoons sugar
½ teaspoon ground ginger
¼ teaspoon black pepper
3 cups cooked chicken (shredded or cut into small chunks)
1/3 cup cilantro (chopped)
1/3 cup green onions (sliced)

Cooking Instructions:

Step 1: Heat a skillet over medium high heat. Add sesame seeds and cook while stirring until they are lightly browned. Remove from heat and set aside. Bring a large pot of water to a boil and cook according to package direction until Al Dente. Drain pasta and cool. Transfer to a large serving bowl.
Step 2: In a jar with a tight fitting lid combine vegetable oil, rice vinegar, soy sauce, sesame oil, sugar, ginger, black pepper and sesame seeds. Shake well.
Step 3: Pour the dressing over the noodles. Add chicken and mix well. Add green onions and cilantro and serve.
(Makes 4 Servings)

Easy Peasy Chicken and Rice

This takes like 5 mins to prep and then you can throw it into the oven for a while and done.

Ingredients:
1 can Cream Chicken
1 1/3 C Water
3/4 C Rice
1/2 t onion Powder
1/4 t pepper
2 C frozen veggies
4 Skinless Chicken Breasts (or if you're us just use one breast and cut it into quarters)
1/2 C Cheese

Stir everything but the cheese together. cook at 375 for 50 mins. Sprinkle cheese on top once cooked

Bran Muffins

This is another recipe from my Nana that we love! I love that I can make the full recipe and store the dough in the fridge for up to 6 weeks to make fresh muffins whenever we want them
Ingredients:
2 Cups Bran Cereal
2 Cups boiling water
2 1/2 C sugar
1 C shortening
1 quart buttermilk
5 C flour
4 t baking soda
1 1/2 t salt
4 eggs
4 C All Bran Cereal

Mix 2 C bran cereal and the water. Let Stand. Cream Sugar and shortening. Sift together dry ingredients. Add eggs one at a time to shortening mixture. Beat well after each addition. To this add buttermilk and remaining 4 cups of All Bran Cereal. Stir in bran water mixture and add in dry ingredients. Fold until moist. Store in covered container in the refrigerator. for up to 6 weeks.

Bake in muffin tins at 375 for 20 mins

Mongolian Chicken

This is from one of my favorite blogs. blogchef.net is such a fun blog and the pictures just make you salivate!! My family loved this recipe! YUMMM!!

Ingredients:
1lb boneless skinless chicken breasts (sliced into thin strips)
½ cup cornstarch (or more, for coating)
2 tablespoons garlic (minced)
1 white onion (sliced)
2 green onions (sliced)
1 teaspoon salt
¼ teaspoon black pepper
Oil (for frying)
Sauce-
¼ cup chicken broth
1 ½ tablespoons cornstarch
2 tablespoons hoisin sauce
1 tablespoon oyster sauce
1 tablespoon dry sherry
2 teaspoons sugar
2 teaspoons soy sauce
2 teaspoons crushed red pepper flakes (or less, to your taste)

Cooking Instructions:
1: In a medium bowl whisk together chicken broth, hoisin sauce, oyster sauce, sherry, sugar, soy sauce and crushed red pepper flakes. Set aside.
2: Toss chicken with cornstarch in a bag until all of the strips are thoroughly coated. Heat a deep fryer to 375 degrees. Fry chicken strips in batches until golden brown and fully cooked. Drain on paper towels. Place into the oven to keep warm.
3: Add a tablespoon or two of oil to a wok over medium-high heat. Add garlic, onion and green onions. Season vegetables with salt and pepper. Stir fry until vegetables have reached your desired tenderness. Remove from pan and set aside.
4: Pour the sauce mixture into the wok and cook until the sauce becomes thickened and bubbly. Add chicken strips into a large serving bowl, pour sauce over chicken, add onions and mix well. Serve with white rice.

Best Taco Soup

Ingredients

2 cans Chicken Breasts with water

4 cans Great Northern White Beans (undrained)

16 oz salsa

8 oz grated cheese (cheddar or Mex blend)

2 cans chicken broth

8 oz cream cheese

10 oz bag frozen spinach chopped, thawed and drained (or 10 oz fresh)

Bag Tortilla Chips

Directions:

Put everything in crock pot (EXCEPT Cheeses) for 4 hrs. Stir in cream cheese just before serving. Sprinkle grated cheese as a topping. Eat with Tortilla chips J

***take ½ cream cheese and blend with a ½ cup of soup, repeat.

Egg Roll

A while back a good friend of mine came over and showed me how to make these and we've loved them ever since!

Ingredients:
Egg Roll Wraps
3 C shredded cabbage
3 C shredded carrots
1/2 lb ground beef
Soy Sauce, salt and pepper
Oil for frying

Cook meat with salt, pepper, and soy sauce then add cabbage and carrots. Remove from heat and spoon into egg roll wraps. Wrap according to pkg and seal with water (dipping finger into it and rubbing it on the seams) Lastly, fry in oil till light brown

Waffles

I used whole wheat last time I made this and ended up making pancakes instead and it was a HUGE hit!!

Waffles:

2 Eggs

1/4C Vegetable Oil

2Tb Sugar

1t Salt

1 3/4C Milk

1 3/4C All Purpose Flour

4t Baking Powder

Beat egg yolks, stir in milk & oil. Add flour, sugar, baking powder & salt. Stir just until large lumps disappear. Beat egg whites until stiff and gently fold into batter. Bake and Serve


Orange Julius

Orange Julius:

1 can frozen Orange Juice

1 can milk

1 can water

1/2 cup Sugar

1t Vanilla (or less)

10-12 Ice cubes

2 eggs


Nana's Beans

My nana would make this every few months for my family and we all loved it! We would always eat it with cottage cheese. Everytime I make this it brings back wonderful memories of her and the fact that my fam loves it too is a HUGE bonus! My husband can't get enough of this and it makes me happy!

2 lbs Dry Pinto beans

Rince with Hot water, check for rocks Add lots of water and put on stove

3 Dried Chilies (the red ones)

1 T Gebhardt Chili powder

Turn down when it starts to boil, make sure it continues to “dance”

Garlic Salt

Salt

After its been cooking for an hour or so sprinkle in garlic salt then add in a good amt of salt to taste

Mash a little after cooked

Squoosh a whole can of peeled tomatoe

Add can of diced green chilies 4oz

Cook lb of ground beef and season with salt, pepper, chilie powder and 4oz can of diced green chilies

Add Meat to beans and boil for about another hour

***esp if beans are not fresh, Rince beans in water and let sit overnight. Change water and Bring to a boil on stove in the morning. Then 2 hours or so before dinner time follow Nana’s Recipe.

Scallop Potatoes

4-6 Medium Potatoes

1/2C Milk

2 T Flour

1C Chedder cheese

2 T Butter

Salt & Pepper to taste

Preheat oven to 375. Cut Potatoes into THIN slices (I think that's the trick), and layer pan with potatoes, sprinkle 1/2 flour, dot with 1/2 butter, salt, pepper, and then cheese. Repeat for second layer but carefully pour milk over after you have sprinkles the flour on. Cover with foil and cook for 40 min (or until potatoes are soft), remove foil for last 5 min.


Chimmichangas


Chimmichangas

1 1/2C of shredded beef

1 can of Tomato Sauce

½ can of diced green chilis

½ C of cheese

Tortillas

Season (salt, pepper, taco seasoning) Warm beef mixture, place in tortilla, roll up, toothpick it and fry in oil till tortilla is brown

Lettuce Wraps

My whole family LOVES this dish!! Even my little guys have 2nds and usually 3rds (they just don't eat it all wrapped up in the lettuce)! AMAZING!!! It uses a few ingredients I wouldn't normally have on hand but once you have them they last a LOONGGG time!
Ingredients:
Special Sauce: (mix this sauce and place in fridge till ready to eat)
1/4 C Sugar
2 T Soy Sauce
2 T Rice vinegar
2 T Ketchup
1 T Lemon Juice
1/8 t sesame oil
1 t Chinese Hot Mustard
1/4 C Water
1-3 t Garlic and Red Chile Paste (I use only 1, ya we're whimps!)
Stir Fry Sauce and Ingredients:
Sauce
2 T Soy Sauce
2 T dark brown sugar
1/2 t rice vineger
3 T vegetable oil
Stir Fry ingredients
3 Chicken breasts
1 C minced water chestnuts (available in cans in asian section)
2/3 C canned straw mushrooms (never actually used this but I'm sure its delish)
3 T Chopped green onions (or more)
1 t minced garlic (or 1 clove)

Iceberg Lettuce
1/2 pkg rice noodles (orange package-maifun)
2 cups cooked rice (this is NOT in the original recipe but we like it and it helps fill us up faster)

Directions:
Cook Rice. Mix the special sauce, place in fridge. Mix stir fry sauce and set aside. Dice chestnuts, mushrooms, green onions and place all in a bowl with the garlic. Heat oil in a sauce pan then cook chicken with a dash of salt and pepper on each side till cooked through. Once chicken is cooked dice in to small small pieces. Place ALL stir fry ingredients and sauce into pan and cook through. heat 3 or so inches of oil in pan for rice noodles, once hot enough place a group of noodles in the oil (flip if needed) and remove once blown up (very fun to do). LASTLY carefully seperate each leaf of lettuce.

To eat, take a lettuce leaf and start stacking ingredients into it rice, chicken stir fry, rice noodles and then special sauce. Wrap like a burrito and ENJOY!!!!




Desserts



I'm really not that big in to baking or desserts for that matter but had to share these two favorites!

Homemade Ice Cream
This is a family recipe from my nana. SO DEEELIIICIOOOOUUSSS!!!

Ingredients:
3 Eggs
3 Sugar
1 1/2 T Vanilla
1 Can Evaporated Milk
1 Pint Whipping Cream
1/2 Gallon Whole Milk (this is approx, just fill milk to the "fill"line)
Optional: 3 cups fruit/ nuts/ Oreos....this is where you can really get creative and have fun with it!!

Directions:
Mix the first 4 ingredients and pour into ice cream maker. In seperate bowl whip the whipping cream then add and mix into the maker. Add crumbled cookies, diced fruit or whatever then pour milk to fill line. Place in iecream maker and layer ice and rock salt around tub and turn on.
ENJOY!!!!

OREO HEAVEN!
A friend of mine made this for me the other day and I was in heaven. Not usually a big fan of oreos but the mixture here is Delish!! All you do is replace the rice cereal in Rice Crispie Treats with a package of Oreos ! EASY and DELICIOUS!!!

Ingredients:
1 pkg Oreos
1 pkg Marshmallows
1/4 C butter (I usually use less)

Okay in case you don't know how to make Rice Crispie Treats here it is...
Put the oreos in a baggie and let your kids have a good time pounding on them to crumble them into tiny pieces. Melt butter, mix marshmallows into butter and heat them in the microwave till they triple in size. Take out and mix oreo crumbles into it and shape into a greased 8x8 pan.
