EASY Lasagna

I thought Lasagna was an impossible meal to make and never actually tried it until Alicia introduced me to this recipe...Alicia, take it away

Easy Lasagna

9 Lasagna Noodles

1 Jar of Spaghetti Sauce

1 C Cottage Cheese

¾-1lb Ground Beef

Mozzarella and/or Cheddar cheese

Pre-heat oven to 375. Boil Noodles till tender and cook ground beef till brown, season beef with Italian seasoning, salt, garlic and pepper. Mix cooked meat, cottage cheese and Spaghetti sauce in a bowl. In a 9x13 in dish layer 3 cooked noodles then meat sauce and last cheese. Repeat till there are 3 layers. Cover with Foil and cook for 35min then remove foil and cook for 10min till cheese is starting to brown. (Optional to layer non-cooked noodles in pan to bake, just remember that they will expand to fill the whole dish, I’ve never done it that way) This is also an easy dish to freeze and cook later, so don’t worry if there are lots left over, saves cooking another day.

A family Favorite and pretty darn healthy

Chicken Sauce

1can cream of chicken

½ can milk

½-1 can of chicken

Warm and serve

Rice

½ C Rice

1 C water

Bring to a boil, lower heat to low, place on lid and simmer for 20min

Place Chow Main Noodles, Cheese, Cut/chop Celery, Green Bell Peppers, Green Onions, Tomatoes, Almonds and Coconut in separate bowls and let everyone assemble and eat!

Taco Salad with a twist

This is not your (or my) normal taco salad. It is coated with catalina dressing (instead of my normal ranch) and uses Nacho chips (instead of my normal plain tortilla chips). It was good and a fun change for taco salad.

Taco Salad
Ingredients:
2lbs ground beef
2 packages of taco seasoning mix
2 cups shredded cheddar cheese
1 red onion
1 yellow onion
2 heads lettuce (chopped)
4 tomatoes (diced)
2 avocado’s (peeled and chopped)
1 ½ cups block olives (sliced)
1 bag nacho chips
1 bottle Catalina salad dressing

Cooking Instructions:
Step 1: In a pan brown ground beef along with yellow onions. Add in one package of taco seasoning mix and water as directed on the seasoning package. Set aside.
Step 2: In a large bowl mix together tomatoes, lettuce, avocados, cheddar cheese, red onion, olives, and the other package of taco seasoning mix. Add beef mixture and toss until well combined.
Step 3: Right before serving – Toss with Catalina salad dressing and add chips.

Mexican Pizza


Ingredients:
1lb ground beef
1 (1 ¼ ounce) package taco seasoning
8 small flour tortillas
2 tablespoons water
1 (16 ounce) can refried beans
2/3 cup mild salsa
2 cups Colby jack cheese
¼ cup tomato (diced)
¼ cup green onion (chopped)
oil (for frying)

Cooking Instructions:
Step 1: With your hands mix together ground beef, taco seasoning and water. In a large skillet brown ground beef over medium heat for 5-6 minutes. Break up the beef up into small pieces with a spatula while cooking. Set aside.
Step 2: Add oil to a medium frying pan. Heat to medium-high and fry tortillas one by one for 30 seconds (or until browned) on each side. Be sure to pop any bubbles that form while cooking. You want to keep the tortillas as flat as possible. Remove from pan and drain on paper towels.
Step 3: Warm refried beans and pre-heat the oven to 400 degrees. Stack each pizza by first spreading a layer of refried beans, then a layer of meat followed by a layer of salsa. Now stack another tortilla on top. Stack cheese on top of that followed by tomatoes and green onions. Repeat until all pizzas are stacked.
Step 4: Place on a baking sheet and put into the oven. Bake on 400 degrees for 8 minutes.
