3/4 C Milk
2/3 C seasoned bread crumbs
2t seasoned bread crumbs

Banana Pancakes

So healthy! So GOOD! I love that I can just throw everything into a blender and then pour batter onto the griddle! Doesn't get easier than that!! I love these with applesauce! And sometimes add vanilla protein powder to up my protein. ENJOY!

INGREDIENTS
  • 2 cups gluten free oats
  • 1 1/4 cups vanilla almond milk
  • 1 large ripe, organic banana
  • 1/2 teaspoon ground cinnamon
  • 1 heaping tablespoon local honey
  • 1/4 teaspoon sea salt
  • 1 teaspoon pure vanilla extract
  • 1 1/2 teaspoons baking powder
  • 1 large organic egg
  • coconut oil or butter for cooking
INSTRUCTIONS
  1. Place all ingredients, except egg and coconut oil in the base of a blender and blend until smooth. Add egg and pulse a few times until egg is fully incorporated.
  2. Heat a griddle or large saute pan over medium heat and melt a teaspoon or two of coconut oil. When hot, pour or scoop the batter onto the griddle, using approximately 1/4 cup for each pancake. Brown on both sides (about 2-3 minutes per side) and serve hot with maple syrup.
  3. *If batter becomes too thick to pour easily, add a tablespoon or two of almond milk to thin.

Quick and easy Pizza Crust


Usually i make a healthier, whole wheat pizza crust but my family loves when I bust out the white flour with this delicious recipe!!

  1. Preheat oven to 450 degrees F (230 degrees C). In a medium bowl, dissolve yeast and sugar in warm water. Let stand until creamy, about 10 minutes.
  2. Stir in flour, salt and oil. Beat until smooth. Let rest for 5 minutes.
  3. Turn dough out onto a lightly floured surface and pat or roll into a round. Transfer crust to a lightly greased pizza pan or baker's peel dusted with cornmeal. Spread with desired toppings and bake in preheated oven for 15 to 20 minutes, or until golden brown. Let baked pizza cool for 5 minutes before serving.

Bacon wrapped Chicken

Ingredients
  • 1 lbs. chicken tenders (about 10 chicken tenders)
  • 10 strips bacon, sliced in half length-wise (I used turkey bacon)
  • ½ -1 teaspoon salt
  • 1 teaspoon paprika
  • ½ teaspoon black pepper
  • 1 teaspoon onion powder
  • ½ teaspoon italian seasoning
  • 1 teaspoon garlic powder
  • ⅔ cup light brown sugar, packed
  • 2 tablespoons chili powder
Instructions
  1. Preheat oven to 350 F.
  2. Mix together salt, paprika, black pepper, onion powder,italian seasoning, and garlic powder.
  3. Sprinkle mixture evenly over chicken tenders, (top and bottom) completely coating them generously in the spices.
  4. Wrap two sliced bacon strips around the chicken tender. Tuck in and loose ends.
  5. Mix together brown sugar and chili powder.
  6. Sprinkle this mixture generously over bacon wrapped chicken, top and bottom. Press the sugar mixture into the chicken to pack it on.
  7. Place the chicken on a greased grill pan.
  8. Bake for 25-30 minutes or until chicken is done and bacon is crisp. You can broil for the last few minutes if desired to crisp up the bacon more.
  9. Serve piping hot! Garnish with parsley if desired.

Cheese Fondue

I experimented a lot with fondue recipes at first and many had cheeses I'd never heard of and were expensive then I found my favorite go to cheese fondue that's loved by ALL! We have it every Christmas Eve, Valentines and any other time I feel like it! ENJOY! (I actually usually only make half of this recipe for our family and still have some left over)

1 1/2 C whole milk
1 1/2 C Shredded parmesean Cheese
2  8oz pkgs of cream cheese
1/2t garlic salt

Dippers
-Bacon wraped chicken
-cubed meat (Chicken, steak)
-Veggies broiled in oven (broccoli, cauliflower, Asparagus, diced potatoes)
-french bread cut into squares
-lil' smokies


Pulled Chipotle Chicken with Cilantro Slaw

Really not sure why most recipes aren't just crock pot?? Again I changed this to make it a crockpot recipe. It was super fast, easy and most importantly delicious!! I just ate it how it looks on the picture but my  family enjoyed it with toasted bread (like a bbq chicken slaw sandwich) and it would be great in corn tortillas too. of course!Original recipe used mayo but I substituted for greek yogurt and some honey

Pulled Chipotle Chicken and Cilantro Slaw

Yield: 4 servings, about ¾ cup chicken and ¾ cup slaw each
Ingredients:
1/4 cup apple cider vinegar, divided use
7 tsp. olive oil mayonnaise (greek yogurt, and a touch of olive oil)
2 Tbsp. finely chopped fresh cilantro
2 tsp. raw honey
½ tsp. celery seed (didn't have so I choped up celery leaves and it did the job)
4 cups shredded cabbage (or half a small cabbage)
Chicken Ingredients:
1/4 C Apple cider vinegar
1 tsp. olive oil
½ medium onion, finely chopped
1 clove garlic, finely chopped
1 Can diced green chili peppers 
1 Tbs Chipotle sauce
½ cup barbeque sauce, no sugar added
2 frozen chicken breasts (or if your in a hurry 2 cans of chicken)
Preparation:
Slaw directions:
1. Combine ¼ cup vinegar, mayonnaise, cilantro, honey, and celery seed in a large bowl; mix well.
2. Add cabbage; mix well. Cover and refrigerate for 20 minutes.
Then throw the rest of the ingredients into crockpot on low for 6 hours or so

Carne Asadas!!

I;m Obsessed with these!! They are so flavorful and the meat just melts in your mouth, you won't want to stop eating!! I changed the recipe so I can do it the "lazy" way. Pick up Carne Asada meat and throw everything into a crockpot! I actually prefer it to be a shredded meat anyway. It's delicious with some homemade pico de gillo in corn tortillas!! A-MAZ-ING!!!
Taqueria Style Tacos - Carne Asada 


Ingredients

  • 3-4 pounds flank steak (or roast OR CarneAsada meat, lately I just use Pork Roast cause it's cheap and still so good!!)

Mix these then pour over meat in crockpot and cook on low for 8 hours
  • 1/3 cup white vinegar
  • 1/2 cup soy sauce
  • 4 cloves garlic, minced
  • 2 limes, juiced
  • 1T olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon ground black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon chili powder
  • 1 teaspoon dried oregano
  • 1 teaspoon ground cumin
1 teaspoon paprika

  • Then add 1/4 C chopped cilantro before serving

Salsa:
  • 1/2 white onion, chopped
  • 1/4 cup chopped fresh cilantro
  • 1 lime, juiced
  • 1 lg tomato
  • 1t minced garlic
  • 1 jalapeno
  • Salt

  • Cook up corn or flour tortilla with cheese and add meat and salsa. Yumm
