Pink Poppy Seed Salad Dressing

I keep finding recipes that I really, really like and then I misplace them and can't find them again. This is one of those recipes and I just found it so I am submitting it here so I can find it again and YOU can have access to it and enjoy it.

This is a yummy, yummy sweetish salad dressing to use for a fancy Salad. It makes is so yummy!! This makes a nice size batch (3 cups worth) - so store it in a fun special jar in the fridge to make a quick and easy yummy Salad.

3/4 c. Sugar
3/4 C. red wine vinegar
1 1/2 c. olive or g grapeseed oil
1 1/2 T. poppy seed
1 1/2 tsp. salt
3/4 tsp. dry mustard
1/4 sm chunk of red (purple) onion (this gives it it's fun color)

Blend together sugar, vinegar, salt, mustard and onion in your blender. Add poppy seeds. Add oil slowly. (oh so good on spinach salad!)

Here is one of my favorite salads to use it on.
(But feel free to substitute what you have or desire)
Spinach Leaves
Spring Lettuce leaves
Strawberries slices
Caramelized Pecans
More chopped onions
Crumbled Blue cheese
