Oh so good and healthy!
Put the following ingredients in a medium sized bowl:
1 can corn, drained
1 c chopped cilantro
1/2 c chopped red onion
3-5 roma tomatoes, chopped
1 jalepeno, seeded and chopped
1 red bell pepper, chopped
2 tsp minced garlic
1 can black beans, drained
2 lg avocados, chopped
Next, add:
1 Tbsp salt
6 Tbsp lime juice
2Tbsp vegetable oil
2Tbsp cider vinegar
Mix everything together with a spoon and you're done! Great with chips!
