Cornflake Casserole
3-4 Baked Potatoes (Dice and put in pan)
Mix:
1 can of Cream of chicken
3 spoonfuls of Sour cream
1 handful Cheese
2 T Green Onions
Salt and Pepper
Melt T of butter mix a Cup of Cornflakes and sprinkle garlic salt and /or Parmesan Cheese, sprinkle cheese over top of casserole then cornflake mixture, bake on 350 till top is crisp
Chicken Tetrizini
Boil Chicken for 20min
Noodles spagetti
6T butter (melt)
6T flour (stir in)
3 C of chicken broth
1 C milk
1/4-1/3 C Parmesan cheese
Add chicken chunks and pour over noodles
Pizza Crust
2 ¼ t Yeast
1t Salt
1T Italian seasoning
3 1/3 C flour
1T honey
2T Olive Oil
1 ½ C warm water
Combine all dry ingredients (leave out 1 cup of flour), mix and then mix in wet ingredients. Add flour till not sticky. Let rise, shape and let rise again. Cook at about 410 degrees then spread pizza sauce, sprinkle mozzarella cheese and top with pepperoni or other toppings
Chicken Marinate (2-3 chicken Breasts)
1/2C Zesty Italian Dressing
½ of a lemon
1 t Pepper (or 1-2 t of lemon pepper)
1 t minced garlic (1-2 pieces)
Put all ingredients into a zip lock bag and with chicken and put in fridge overnight
Chicken Enchiladas
6-10 Tortillas
1can of Cream of Chicken
¾ c. Cottage cheese
1 Can of chicken
1 can of diced chili
¾ c of cheese
Mix all ingredients in bowl then fill and roll in tortillas. Place filled tortillas in pan, top with any left over filling and cheese. Cook on 350 for 25 min
Roast (Pork or Beef)
Roast
Potatoes
Carrots
¼ C of butter
¼ C water
Seasoning
Generously season Roast with Salt, Pepper, Garlic powder, and Seasoned Salt. Place in Sauce pan, brown all sides. Place Roast, diced Potatoes and sliced carrots in Crock Pot With butter, water and season again. Cook on High for 6-8hours
Mashed Potatoes
5 Potatoes
Milk
Butter
Salt
Optional: Garlic, Cheese
Dice potatoes fill water above potatoes and boil for 20-30min (till forks cuts through potato easily) Drain, mash and add other ingredients
Stew
5 Potatoes
3 Carrots
1 can of shredded Beef
1 can Green Beans
1 can Corn
2 cans of Tomato Sauce
Salt and Pepper
Dice and Boil potatoes and carrots, once carrots are soft add all the other ingredients, season and serve. Top with cheese…yumm.
Shepherds Pie
2 c mashed potatoes (fake or left over)
2cans Green Beans
1 Can Tomato Sauce
½ - 1 can of shredded Beef (or ½-1 c of cooked ground beef)
½ C cheese
Mix tomato sauce, Green beans, and beef in the bottom of pan, season with salt and pepper. Layer mashed potatoes and top with cheese. Cook on 350 for 20-30min
Olive Garden Alfredo Sauce Recipe
1 pint of Heavy Cream
1 stick of butter
2 T. Cream Cheese
1/2 - 3/4 C. Parmesan cheese
1 tsp. Garlic powder
in a saucepan melt butter. When butter is melted add cream cheese. When the cream cheese is softened add heavy cream. Simmer this for 15 - 20 minutes on low. You may wish to season with a little salt and pepper.
Chicken Cordon Bleu
2 Chicken Breasts
2 T Butter
4-6 pc of Ham
2 pc Swiss Cheese (I've uses shredded mozarella too)
2 T Parmasean cheese
2T Italian Seasoned Bread Crumbs
Salt & Pepper
Smash chicken breasts till 1/8-1/4 inch thin. Melt Butter. Lay Breasts in oven safe dish, pour butterover breasts, sprinkle salt and pepper. Place 2-3 pieces of ham on half of the breasts, followed by swiss and parmasean cheese. Then fold half of the breast over stuffing and secure with toothpick. Top with butter, salt, pepper and bread crumbs. Cover with foil, remove foil for last 5 min. Cook on 375 for 35 min
Chinese Chicken Salad:
2 or more Chicken Breasts; Cooked and Sliced (I marinade in Teriaki marinade overnight and then cook the chicken sometime earlier in the day
1-2 heads lettuce
1 pkg. Chicken Ramen
Any salad additions of your choice (cashews, peanuts, sunflower seeds, veggies)
I marinade the chicken breasts in Teriaki marinade overnight and then cook it earlier in the day (375 for 35-45min depending on your oven), whenever is most convenient. Then I can just slice it up put it in a bag and refrigerate it until dinner time. If you need a recipe for Teriaki marinade, I have one, or you can just grab one from the store. Just as good. My mom just uses canned chicken. Even easier!! I also chop up the lettuce and make the dressing earlier. The only thing you don't want to do early, is combine it all because then it will get soggy. When it's time for dinner just crunch up the ramen noodles, assemble your salad and toss with the dressing. Don't pour all the dressing in at once. The recipe makes too much to use all of it.
Dressing:
3/4 C Sugar
3/4 C Vinegar (Rice vinegar is awesome. Anything will work fine.)
1/2 C Vegetable Oil
2 Tbs. Soy Sauce
4 tsp Salt
3/4 tsp Pepper
2 tsp Lemon juice
1 pkg Chicken Ramen Seasonings
Combine dressing ingredients in blender and blend away!
Shrimp Scampi
Ingredients
1 1/2 lb medium fresh shrimp, shelled
2 Tbsp olive oil
1 medium onion, diced
1/2 cup white wine (or water)
3 cloves garlic, crushed
3 Tbsp parsley, finely chopped
1 pinch crushed red pepper
4 oz butter
1/2 lb angel hair pasta, cooked according to package directions
Salt and pepper to taste
Procedures
1. HEAT oil in a saute pan. Add onion and sauté for 2 minutes. Add garlic and sauté for 1 minute; do not brown. Add butter, wine, red pepper, salt and pepper and reduce by half.
2. ADD shrimp and cook 1-2 minutes until fully cooked.
3. TRANSFER pasta to plate and top with shrimp mixture.
Zucchini Bread (from az City neighbors)
3 Eggs
2 C sugar
1 C Oil
2 C Zucchini
2 tsp Vanilla
3 tsp Cinnamon
1 tsp baking soda
¼ tsp baking powder
1 tsp salt
3 C Flour
Cook at 325 for 60-70 mins
Crock Pot Chicken (from Nikaela)
6 Chicken Breasts
1 can cream of chicken
1 can Diced Green Chilies
2 C shredded cheddar or Mex Cheese
Cook in crock pot on Medium for 6-7 hours. Mix in cheese just before serving. Chicken will fall apart when stir. Serve in tortilla for stuffed burrito or rice.
Flat Bread
2 C warm water
1 t sugar
1 T Yeast
2t salt
4 C Flour
¼ C butter
Mix ingredients together and let rise till doubles. melt and spread ½ on pan. Spread out dough on pan and then other ½ butter on top and sprinkle garlic salt. Let rise again till doubles. Bake at 400 for 10mins OR 300 for 20mins
Ritz Chicken
8 Chicken Breasts
2 C Ritz Crackers srushed
3 T Parm Cheese
¼ C butter (drizzled on top)
2 t Garlic Salt
1 Cup Milk (or plain yogurt or buttermilk)
Dip Chicken Breasts in Milk and let sit for few mins. Mix the other ingredient and cover chicken . Bake at 375 for 30 mins??
Steak Marinade
1 ½ C Steak Sauce (A1)
1 T Soy Sauce
1/3 C Zesty Italian dressing
½ C Honey
½ t Garlic Powder
Spinach baked Zitti
8 oz cook Penne Noodles ( till tender but still firm)
1 14.5 oz Italian style stewed tomatoe
1/8 t crushed red Pepper flakes
4 oz Spinach, washed and chopped
2 oz cream cheese
½ t ground nutmeg
Warm tomatoes and pepper flakes over med/low. Add spinach, cream cheese and nutmeg till spinach wilts. 1-2 mins. Pour over noodles, stir and toss
Mom’s Stir Fry
Cook meat, I use chicken usually, in oil, soy sauce and/or terriaky sauce
Stir fry veggies in iol with soy sauce and ome oil
Mix ½-1 C water with 1-2 t cornstarch
Pour water in with veggies with lid on
Opt Veggies; carrots, celery, squash, broccoli, cauliflower, peas
Curtis Thanksgiving Salad
Equal parts of;
Sour Cream
Marshmallows
Pineapples
Nuts (pecans)
Strawberries OR Mandarin oranges
Stroganoff
½ lb ground beef (season with garlic, seasoning salt, pepper and salt)
1 C sour cream
1 can of Cream of Chicken
Bag or box noodles (or potatoes)
Brown and season meat. Mix in sour cream and cream of chicken. Serve over noodles or potatoes. Sprinkle cheese on top.

The meaning of my name has something to do with chicken tetrazzini (I swear to you) but I just can't remember what it was! Anyway, all these recipes are givin' me the cravings!!
